Creamy Mushrooms & Eggs

Sorry to report that we have no lovely photos to share, as unfortunately we had to cancel our trip the day of our flight. Nana had a particularly bad flare up of knee arthritis and this would not have worked with our grand plans for touring. 

Very disappointing indeed but luckily we have both been to Paris and the countryside on a few other trips together (Nana has several more trips under her lucky belt than I :) so please do not feel badly for us.  She is feeling much better but had a challenging few weeks, so it was clearly the right decision. And let's not forget that I have a son attending Boston University- yup- right in the midst of all the tragedy in that town we would have been miles and time zones away. 

Things do have a way of working out, no ? So we took a much needed "staycation" and recuperated all around.  We are refreshed and looking forward to catching up with our fellow Doristas.  Nana even managed to make last week's dish but when she reported the results, I took a pass :)                                         Sorry Dorie.
This week's creamy mushrooms and eggs, however, were a big hit. My guys love everything in this dish. I substituted Rhodes frozen dinner rolls as my market did not have brioche and they were the closest substitute (and I was not baking brioche this week.....).
My younger son said he would love the mushroom sauce on a burger with swiss cheese. Sounds like a plan....

This week's recipe of creamy mushrooms and eggs were so good. I used English muffins instead of brioche and it worked out well.  The mushroom sauce was easy to prepare and the shallot gave it such a wonderful flavor.
Hubby and I both love poached eggs so putting this all together was a perfect light supper. I served a tomato salad on the side.  I will definitely be making this again and think it is perfect for a Sunday brunch. 
Since I did not post last week's swiss chard pancake recipe I will include it here as a make up.  
As much as I enjoy swiss chard, I was not pleased with this particular dish. The combination of onions, shallot and garlic was not one I cared for.  I filled the crepe with an old Italian recipe called Jambort/Gianbort (sp ??).  It consists of fried Italian peppers which are stewed in crushed tomatoes with seasonings.

I was very pleased that I made my very first crepe and now that I see how easy it is, I plan to make a regular crepe batter and top it with a sprinkle of sugar. When I was growing up my French mother often made sucre crepes and they are still one of my favorite desserts.

  1. Oh I love that Nana made crepes with the swiss chard and I love the look of this with the tomato sauce ! Glad you both enjoyed the eggs and mushrooms - it's a ew breakfast fave in our house.

    So sorry that you had to cancel your trip :( Glad you made the best of it and had a stay cation… Hugs to both!

  2. Sometimes life forces things on us and it´s for the best. Good to know the knee is better! English muffins, that´s a great idea. And the mushroom mix on burgers or pasta. Have a good weekend!

  3. Bummer that you had to cancel your trip, but it does sound like it worked out for the best. Glad your son is safe! And I hope Nana's knee heals up fast.

    I like the sound of the mushrooms on a burger. Oh yes, this must happen. Soon.

  4. Sorry to hear about your trip - although I was thinking about Mr. Boston U when things were crazy out there & was hoping all was well. Nana - hope you are feeling much better now.

  5. I stretch to call a staycation anything but the perfect vacation for me since I travel so much for wrk. Still, sorry to hear yours was cancelled. My mushrooms are at the ready for all sorts of things, including burgers this week. And now a crepe.

  7. Great idea to make a burger topping out of this meal and I love the Italian crepe... now that is an original concept. I don't think I've ever used Italian in an sentence with crepe.

  8. Sorry to hear about you trip, but so glad you are feeling better Nana. And Trish…it was a blessing in disguise…I would have been beside myself if my child was at BU and I was in another country! Funny how things just work out the way they are supposed to.
    Both of your Creamy Mushrooms and Eggs look excellent…these were so deliciously perfect for anytime of the day! Nana, your crepe looks luscious and I would really enjoy the sucre crepes. Happy Friday and have a wonderful weekend, ladies!

  10. I have been thinking of you the past two weeks - running around Paris like crazy - so I am very sorry that this trip had to be canceled. But the silver lining is that you are on the mend, Nana, and that you were here in the States when the Boston Marathon catastrophe happened, Tricia. I think you'd have not been a happy camper being separated by The Pond at that moment. Both your egg dishes look delicious and I'm with your son, on a burger with cheese. Nana, I think your crepe with your peppers/tomatoes looks delicious. Many of our colleagues made crepes from the swiss chard recipe and they each liked them very much. Stay well, Nana.

  11. Glad that these were popular with both of you. Sorry to hear your trip was cancelled. Here I was waiting for the full travelogue. Hope all is well with your son at BU. What a scary week, it was. Cher and I discussed by email that you must have been freaking out being in France while that was going on. I'm sure it wasn't much better being in a different city, yet getting in touch must have been easier. Hope that Nana is on the mend. Have a great weekend.

  13. I'm sorry you had to cancel your trip, but I'm glad that you're feeling better, Nana, and I'm glad Tricia was able to be there for her son, too. Both versions of the mushrooms look great and the crepe is beautiful, even if it wasn't a hit.

Nana and Tricia: so glad to read that things are on the mend although it is always somewhat disappointing to cancel plans for a long planned trip and as far as I remember this was the second time that you had to change plans for a trip to Paris but, most importantly, Nana is better now and that´s all that counts - I am glad to see and read that you and your families really enjoyed this recipe, both your plates and presentations are fabulous!
    Have a lovely Sunday - we are still amidst celebrating since our youngest daughhter is turning five on the fifth of May today, so we still have lots of cake to demolish.

  16. Too bad about your trip, but I hope you're doing much better Nana. I can't imagine how stressful that was for you Tricia. So happy that everything turned out well for you all, and that you weren't on the far side of the world when you needed to be home.
    You certainly made the most of it with these dishes! Both of your takes look wonderful. I loved this dish too. It was a good one to get back into the FFWD swing of things.
