Hèléne's All White Salad

A big hit in our house.
 This week's all white salad turned out better than I expected.
 I'm not a fan of cabbage so I replaced the Napa cabbage with
 thinly sliced Romaine lettuce (white portion only).   
                         Thinly sliced white mushrooms and sliced celery worked perfectly. 
I thought about using thin slices of onion in the salad but decided to use only
 the ingredients Dorie suggested and leave my additions for another time.
The vinaigrette was so easy to prepare using my mini food processor. 
I have made fresh mayonnaise before and it can be a problem, but this was
 so easy. Yogurt is not something I enjoy but when blended with all the 
other ingredients, it made a wonderful dressing.  Hubby and I both 
enjoyed this wonderful little salad.

Opposite reaction in our house, though I did find the dressing 
easy to make. Unfortunately we just were not fans of the overall taste.
 I used the Napa cabbage along with the other listed ingredients 
and the whole combo seemed to tart for us. 
Short and sweet, now on to next week's crepes. 
Spoiler alert- those crepes could be filled with Napa cabbage
 and we would still enjoy them - we love crepes !!

  1. I was surprised at how much I enjoyed this, even though I found the dressing a little tart until it hit the apples. Lovely versions, both!

Tricia and Nana: both your winter white salads look absolutely wonderful - mixed reactions at our house as well but I agree that the dressing was nice and easy to prepare and it is always nice to prepare some homemade mayonnaise/dressing. Some nice fresh cheese would probably be nice with this recipe.

  4. I don't think I would do the crepes the injustice of filling them with cabbage :-)

    Hope you guys made out okay (and are fully powered) after this week's storm. It sounds like your area was hit with a lot of ice. No fun!

  7. I liked the salad but I did change it a bit. The lack of celery lead me to fennel which proved to be a good choice and I skipped the yoghurt mayonnaise entirely!

  8. Nana I loved the dressing too. Tricia I can see how it was a bit tart... it's a flavor I like in the winter. Not for everyone.

  10. Nana, I'm in your camp. We thought this was very good. Tricia, I can see your point too. It could get too tart pretty easily, especially if your Granny Smith's were really tart. I wish I had cut my apples in smaller pieces. In fact everything should have been in smaller pieces but still we enjoyed it. It was my first mayonnaise and I'm in love with it! Hope you ladies are keeping warm and aren't snowed in!

  11. Yeah, I didn't like this one either, Tricia, but glad that Nana did. I did like the dressing more than the overall salad. I'm looking forward to the crepes. I don't think I've made them since I was in high school. That was a LONG time ago. Hope you are making out OK with all the snow lately. Have a great week.

  13. Surprising that Nana liked this while Tricia did not. I did find the dressing tart but enjoyed eating the mushrooms raw - first time!

  15. Tricia, the platter you served this on is just gorgeous. Your comment about the crepes cracked me up :-) They can make anything taste good, can't they. Nana, I'm really glad you enjoyed this one. I actually think I would've liked it better with romaine.

  17. I think I’m in Nana’s camp on this one…I really enjoyed it for my lunch with some goat cheese on top. Tricia…sometimes we win…sometimes we lose! I’ve disliked many recipes on French Fridays…at least it wasn’t one of those expensive recipes, that wound up in the trash! Next week should be a winner for all of us! I love crepes and brought my crepe pan with me to Florida. I have already made two double batches for my grandsons…they loved them!

  18. Great idea to use Romaine lettuce instead of cabbage, Nana! I wonder if we would have liked this salad better that way. Although we also found the overall taste to be too tart...
